Raw Chocolate Brownie
I’ve had many requests for this recipe - it’s very popular! A decadent morsal, that is usually well received at Saturday night dinners at my wellness retreats. I like to serve it with a little natural yogurt (or coconut yogurt) and raspberries.
Bursting with natural ingredients, this tasty treat is also gluten and dairy free and suitable for vegans. It was kindly passed on to me by one of my dairy and gluten free students. She sourced the recipe from ‘My New Roots’.
Ingredients
Brownie Base
2 cups of walnuts
1 cup raw cacao powder
2 ½ cups dates - pitted
1 cup raw almonds
Frosting
½ cup maple syrup or coconut nectar
¼ cup coconut oil
⅔ cup raw cacao powder
Directions
Brownie Base
Blend walnuts in a processor until finely ground
Add cacao and salt to the walnuts and blend
Adding a few dates at a time, continue blending them into the mixture
Roughly chop almonds and combine with mixture
Press ingredients into a lined pan, so they stick together well
Frosting
In a processor, blend maple syrup and cacao powder until smooth
Warm coconut oil and then add to other ingredients and blend until emulsified
Spread over brownie base
Place in freezer and chill for 1-2 hours.
Then store in airtight container, either in the fridge or freezer if you prefer
